Barcelona pastry chef Toni Vera has claimed Spain’s Best Artisan Butter Croissant title for 2025, marking his fourth victory in the prestigious competition organised by Barcelona’s Pastry Guild. Vera runs Mervier Canal, with bakeries on Calvet (Google Maps) and Muntaner streets, and previously won in 2016, 2019 and 2022, demonstrating remarkable consistency by winning every three years like clockwork.

The competition, which draws entries from bakeries across Spain, recognises excellence in traditional butter croissant production. Last year’s winner was Brunells, also from Barcelona, whilst 2023’s champion was Prat Can Carriel from Roda de Ter.
The award highlights the quality and tradition of Spanish pastry-making, with Mervier Canal now firmly established as a national reference point for artisan croissant production. Vera’s repeated success underscores the bakery’s dedication to maintaining the highest standards in traditional pastry craft.
