Barcelona’s Pastry Guild will gift Mayor Jaume Collboni with the traditional Postres de La Mercè next Wednesday, continuing a sweet tradition that began in 2021.

The dessert, created by chef Jordi Vilà and inspired by a meal shared with renowned pastry chef Antonio Bachour, is made with almonds and figs. First launched to mark the city’s annual patronal festival, the treat has since become a fixture of La Mercè celebrations.

Since 2022, the Pastry Guild has distributed the recipe across its member bakeries, allowing nearly a hundred shops in the Catalan capital to showcase the creation in their windows each September. The initiative highlights Barcelona’s long-standing blend of culinary creativity and festive tradition.

The presentation to the mayor serves as both a symbolic gesture of the guild’s role in civic life and a reminder of how gastronomy continues to shape the city’s cultural identity.
